Our Story

Trio Italian is a family-run independent restaurant in the heart of Saffron Walden, founded by three owners with a shared love of great food, warm hospitality and bringing people together.

Since opening our doors in August 2024, we’ve been incredibly proud to become part of the Saffron Walden community. We love this town and everything that makes it special — from its people and local events to the brilliant independent businesses that give Saffron Walden its character.

Our food is at the heart of what we do. We’re passionate about fresh pizza, fresh pasta and quality ingredients, sourcing locally wherever we can. Our seafood comes from Saffron Fish Co., our fresh produce from Fisher & Woods on Shire Hill, and our ice cream from Saffron Ice Cream. Working with local suppliers means we can serve great ingredients while supporting other independent businesses in our community.

We’re also incredibly proud to have been recognised with the Young Entrepreneurs Award in the Uttlesford District — a very special milestone for us and a reflection of how far Trio has come since we first opened.

But Trio has always been about more than just food. We wanted to create a restaurant that feels welcoming, relaxed and full of life — somewhere for family dinners, date nights, celebrations, catch-ups with friends or simply a great bowl of pasta and a glass of wine.

As an independent business ourselves, supporting local really matters to us. We’re proud to stand alongside the many fantastic independent businesses that make Saffron Walden such a brilliant place to live, work and visit.
